GSP with severe allergies

I have a 10 year old GSP that I'm told has severe allergies. She also has chronic ear infections, that I treat with antibiotics which I always have on hand.This dog had sarcoptic mange as a young pup. I have two other GSP from the same liter, who have no problems. I have tried everything with no results.
Allergenic foods,shampoos, amino acids,yogurt,cortisone shots/pills etc. I do not want to give her anymore cortisone,which didn't help anyway. She now has lost most of her hair.Could it still be mites? I'm desperate for answers. I need to help her.

Yes it could still be mites Try treating very aggressively sulfur dips and ivermectin you will need to talk to the vet but tell him about scarcoptic mange at younger age those mites are harder to find

Regarding your GSPs allergies...have your vet do a blood test for lupas. There two types of lupas that are common in gsps as well as other breeds. It sounds like this may be the more managable type of lupas which can be treated long term with steroids and antobiotics. Please research the possibility. Our gsp was just diagnosed with the more severe form of lupas by Univ of Penn. The staff there is excellent and does an extensive in depth screening of all possibile health issues related to your pet's problem. We're glad we took our girl there. Good luck.
